After growing mushrooms for the past six years, we’ve found these to be our most reliable, dependable strains, perfect for both the beginner and the seasoned gardener. Our mushroom logs have limited availability so order now before these sell out. Once these last logs of the season are gone, we will not be making more until Fall of 2024 or Spring of 2025.

PoHu SOLD OUT! This is our most reliable oyster. It has a beautiful parchment color and produces weighty clusters of perfect mushrooms. It fruits throughout the year for us depending on weather.
Night Velvet Shiitake: SOLD OUT! This strain is more tolerant of our warmer temperatures and produces big flushes. These shiitakes have with large, dense caps. They respond well to forcing with a 24 hr cold water soak every 7 to 8 weeks during warm weather, but we usually let them fruit naturally.
Grey Dove Oyster: SOLD OUT! These logs produce very meaty mushrooms with beautiful gill structure. It enjoys cooler temperatures and has preformed well even through snow for us. It is one of our showiest, most impressive mushrooms in our yard.
Italian Oyster: SOLD OUT! This oyster is bug-resistant in warmer temperatures and usually fruits for us during late summer through fall. It has a buttery texture and is my favorite to fry. The larger mushrooms have a similar texture to a fried chicken sandwich making it a family favorite.
Miss Happiness Shiitake: SOLD OUT! This is one of our main producers during late fall and winter when our other shiitakes are dormant. It produces extremely dense, large caps. Miss Happiness takes a little longer to colonize the log, but it is definitely worth the few months of extra waiting for these perfect, cool-season shiitakes.
Polar White Oyster: SOLD OUT! This is a consistent producer of pristine white, very dense mushrooms. With heavy yields late summer and into winter, Polar White far exceeds its name in our climate.
Blue Dolphin Oyster: SOLD OUT! This is definitely our showiest mushroom strain. It produces the most stunning blue clusters late fall through winter. During its preferred weather conditions, you will be amazed by the beautiful gill structure, stunning color, and meaty texture. This is the most awe inspiring mushroom we grow.
WR46 Shiitake: SOLD OUT! This strain has the fastest spawn run time and is typically our first shiitake to produce. It is the workhorse of our mushroom yards producing flushes throughout the year. This strain can also be forced with a 24 hour cold water soak every 7 to 8 weeks for a more scheduled fruiting.

There are so many ways to use your mushrooms. If you ever get too many to eat fresh, they are easy to dry and can be used later during bad weather when your mushroom logs don’t flush. They can also be cooked and then frozen.

Quick answers to frequently asked questions about ordering and picking up logs.

When will my logs be ready?
You will be notified by email as soon as your logs are ready for pick up. We expect all logs to be ready late November or early December, but weather will play a factor in exactly when we finish.

Do you ship mushroom logs?
No, we do not ship any logs or offer local delivery of logs. All logs must be picked up at our homestead in Clayton.

When can I come and pick up my logs once they are ready?
We will have several dedicated pick up days and times in late November and early December. These dates will be in the email you receive when your logs are ready. We will work with you to arrange another time if those options don’t fit your schedule.

Where will I need to pick up my mushroom logs?
Log pick up will be at our mushroom farm and homestead. We are located in Clayton near the intersection of Barber Mill Rd and Government Rd on the Cleveland side of town. You will receive an email with detailed directions to our homestead when you your logs are ready for pick up.

Do I need to pay for my logs before I pick up?
Yes, payment is due at the time of ordering. We are only making logs to order during our once a year mushroom log sale. We are not making extra logs, so be sure to order and pay for your desired logs now. Full payment is due at the time you place your order.
Our Logs are Sustainably Harvest from Trees on our Homestead
We carefully select the right species of trees to sustainably harvest off our land. We harvest at just the right size and at the perfect time of year to get the best inoculation rates resulting in better yields.
Our Mushroom Bolts Are “Aged” to Perfection
We give our cut logs plenty of time to rest which allows them to dry out to optimal moisture content before inoculating. During this time we keep them up off the ground to avoid any potential cross-contamination before we inoculate.
Inoculating With Sawdust Spawn Leads to a Quicker First Harvest
We use a high-powered angle grinder fitted with a specialized mushroom logging drill bit to drill the proper size hole at just the right intervals. This exact spacing in a diamond pattern is what ensures adequate inoculation.
Using a Brass Inoculator We Fill the Holes with Spawn
Our brass inoculators are designed to put in just the right amount of mushroom spawn to fill each hole. Then we use hot food-grade cheese wax to seal everything in place.
We Will Keep Your Logs Stacked Until You are Ready to Pick Up
Our son does most of our heavy lifting for us, including the final stacking of your finished mushroom logs. We’ll have several Pick Up Days so that you’re able to come at a convenient time to take your logs home.
Your Logs Will Be Labeled and Come with a Step-by-Step Instruction Packet
We make it easy for you by carefully labeling your logs with a permanent, durable label with the mushroom name and inoculation date. We’ll also provide detailed, easy-to-follow instructions from the moment you take your logs home all the way to finally making that first glorious harvest.
